Pike's Salade Nicoise
PRONOUNCED "NISWAZ"

Sunning on the beach at Cap d'Antibe or St. Tropez can build up quite a bon appetite; the same can be said for seeing Seattle, also called the "gold coast," mostly by tour operators and taxi drivers.
Pike's Nicoise is true to its provencal inspiration but "un" step beyond. We make ours with hook and line caught tuna, sustainably fished sans mercury, by Fishing Vessel St. Jude.
 Two large chunks of canned (traditional Nicoise is made only with canned, not fresh) tuna sit with aplomb atop organic lettuce, contrasting chopped red tomato, par boiled green beans, black Nicoise olives (the real thing) marinated red onion, and a hard boiled egg, served with a generous side of the best garlicky aioli this side of the big pond.
To drink: Pike IPA, listed in the book "300 beers to try before you die," by Roger Protz kicks Cassis, Bandol, and Cote de Provence Rose in the derrière as a perfect accompaniment to Salad Nicoise. The herbal quality of 4 different hops adds a complexity and finesse matched by no other drink. |

Raul Pacheco Named Pike Employee of the Month

In "Treasure of the Sierra Madre" (1948) Humphrey Bogart sought gold in Durango, Mexico. Chef Raul Pacheco is from Durango and sought his gold in Seattle. Raul moved here a dozen years ago with a love of food and cooking. He says, "I learned to cook holding on to my grandmother's apron strings." Raul's grandma shared her love of spice with her grandson and it shows. His favorite Pike menu item is our wild salmon stuffed with crab in a spicy sauce, served with either Pike Weisse with a lemon wedge, or Pike Naughty Nellie Golden Organic Ale. Raul is a devoted and hard working employee with the respect of his fellow team members, including his boss, Executive Chef Gary Marx. Raul started with Pike seven years ago, on the line, before being made lead cook. He loves to hear how much our customers enjoy their Pike experience. Bob Dylan co-wrote a song called "Romance in Durango" and Raul found his romance in Seattle. He met Leona, got married and they now have two boys, Raul Jr. and Angel. Congratulations to Raul, with thanks for the great contribution that he makes to the pleasures of our customers and fellow employees.
